About this wine
Character
A sparkling wine that goes well beyond the aperitif slot. At first it's closed off by a fine reduction of matchstick and striking-paper notes; with air come green pea, green beans and zucchini blossom, followed by stewed apple and small perry pears. A large glass or a decanter is no indulgence here: the wine demands time and rewards it.
Terroir and origin
The grapes grow on Finca La Sínia in Catalonia, in the Pla de Manlleu field blend below Castello de Selma. The vines stand at around 750 metres above sea level on clay and limestone soils. Ester Nin and Carles Ortiz farm their vineyards according to strict biodynamic principles.
Grape variety and vinification
Chenin Blanc and Marsanne. The grapes are lightly crushed and left for one day on skins and stems before pressing. The must begins to ferment and is bottled while fermentation is underway: the fermentation that started finishes in the bottle, méthode ancestrale.
On the palate
The mousse is restrained, setting the drinking pace rather than taking centre stage. The 2020 shows more fullness than usual, with a creamy texture and a touch of residual sweetness typical of the warm vintage. Beneath the reduction lie soft cooked apples, lemon, fennel and delicate yeasty notes of warm brioche.
Food pairings
A wine made for the table: salad with gratinated goat cheese, sardine rillettes with gooseberry coulis or chicken liver parfait with quince jelly.
Special features
"Biodynamic since day one" is printed on every cork from Familia Nin Ortiz. The estate is one of the few Spanish members of La Renaissance des Appellations, the association of biodynamic producers founded by Nicolas Joly. The wines ferment spontaneously, without fining or filtration.
