About this wine
Character
A Pinot Noir of cool clarity: red cherry and raspberry up front, followed by violet and fine spice. At 13.5% vol., the wine keeps a slender build, favouring freshness and definition over opulence.
Terroir and origin
Aux Combottes is the only premier cru island embedded in the band of grands crus, wedged between Clos de la Roche and Latricières-Chambertin. The vineyard is worked from Morey-Saint-Denis, where the Lignier family has grown Pinot Noir since the 1880s and where Laurent Lignier now runs the estate in the fifth generation.
Grape variety and vinification
Pure Pinot Noir. Fermentation is preceded by long, cold maceration periods, and the proportion of whole clusters has grown over the years. The cellar, acquired in 2008, works by gravity alone: from must to bottling, no pump moves the wine. The share of new oak is deliberately kept low and spread across four coopers, so that no single barrel shapes the wine's profile. Synthetic inputs have been absent from the vineyards since 2007.
On the palate
Silky texture, precise fruit and lively acidity. The tannin is fine-grained and carries a long, clear finish.
Food pairings
With roast duck breast, coq au vin, saddle of veal with morels or porcini mushroom dishes. For cheese, pair with aged Comté or Époisses.
Special features
In 1973, in the midst of a sales crisis, Hubert Lignier decided to bottle his wines himself rather than sell them off in bulk. What had been a grape supplier became an estate with its own name, its holdings later spreading across the Côte de Nuits.
