About this wine
Character
A Pinot Noir of cool precision, as crafted by Domaine Hubert Lignier: well-defined, finely built, worked for length and clarity. The magnum format slows the wine's development, which benefits the structure of the 2022 vintage.
Terroir and origin
Aux Combottes is the only premier cru island at the heart of the band of grands crus, wedged between Clos de la Roche and Latricières-Chambertin. In Morey-Saint-Denis, the Lignier family has grown Pinot Noir since the 1880s; Laurent Lignier now runs the estate as the fifth generation and had reunified it by 2013.
Grape variety and vinification
Pure Pinot Noir. No synthetic inputs have been used in the vineyard since 2007. The cellar in Morey, acquired in 2008, works entirely by gravity: from must to bottling, no pump ever moves the wine. Fermentation is preceded by long, cool macerations; the proportion of whole clusters has grown over the years, while new oak is deliberately kept low and spread across four coopers so that no single barrel dominates. 13.5% vol., dry finish.
On the palate
Clear red fruit, cherry, raspberry and strawberry, underpinned by violet, fine spice and undergrowth. The texture stays silky, the tannin fine-grained, the acidity carrying through to a long, mineral finish.
Food pairings
Pairs with roast duck breast with cherry sauce, coq au vin, saddle of venison with lingonberries and braised pigeon. For cheese, aged Comté and Époisses work beautifully, as do dishes featuring truffle.
Special features
The 1500 ml magnum format is built for long-term ageing and larger gatherings. Bottled at Domaine Hubert Lignier in Morey-Saint-Denis.
