About this wine
Character
A precisely drawn Pinot Noir that channels its substance into length rather than breadth: cool cherry fruit, fine-grained tannin, a clear line. The magnum format allows it to mature more slowly in the cellar.
Terroir and origin
Aux Combottes is the only Premier Cru island sitting right in the middle of the band of Grands Crus, wedged between Clos de la Roche and Latricières-Chambertin. The Lignier family has farmed Pinot Noir in Morey-Saint-Denis since the 1880s; back then, Jacques Lignier bought parcels that phylloxera had devalued. Today, Laurent Lignier runs the estate as the fifth generation.
Grape variety and winemaking
Pure Pinot Noir, farmed organically; from 2007 onward, synthetic products disappeared from the vineyards. The cellar, acquired in 2008 in Morey-Saint-Denis, works solely by gravity — no pump touches the wine from crush to bottling. Long, cool maceration periods precede fermentation; the proportion of whole clusters has grown over the years, while new oak has deliberately been scaled back and spread across four coopers, so that no single barrel sets the tone.
On the palate
Dry and taut: sour cherry and dark forest berries, with violets, undergrowth and a touch of spice. The tannin stays fine-grained, the acidity carries the wine, and the finish is long and mineral. 14.0% vol.
Food pairings
Duck breast with cherries, partridge on lentils, saddle of venison with cranberries, stuffed quail, or coq au vin. Also pairs well with porcini risotto and ripe Époisses.
Special features
The estate's vines trace back to twenty-seven rows that Henri Lignier planted in 1955 in the Monts Luisants climat; in the 1960s, he used their wood to propagate the remaining parcels vine by vine. Hubert Lignier took over the estate's management in 1959 and began bottling his own wine in 1973.
