About this wine

Character

A Pinot Noir of cool precision: well-defined, finely built, geared towards clarity and length rather than sheer weight. The signature style that Domaine Hubert Lignier has honed over decades.

Terroir and origin

Les Seuvrées lies in Gevrey-Chambertin, in the Côte de Nuits. The Lignier family has been rooted in Morey-Saint-Denis since the 1880s: Jacques Lignier bought plots back then that phylloxera had devalued, and his son Jules patiently replanted them. Hubert Lignier took over the estate in 1959 and, in 1973, in the midst of a sales crisis, began bottling the wines himself rather than selling them off in bulk. Over the decades, plots were added across the Côte de Nuits, Gevrey-Chambertin among them. Today, Laurent Lignier runs the estate as its fifth generation.

Grape variety and vinification

Pinot Noir. Since 2007, the estate has worked without synthetic treatments in the vineyards. The cellar in Morey, occupied since 2008, operates purely by gravity—from crush to bottling, no pump ever touches the wine. Long, cool maceration periods precede fermentation; the proportion of whole clusters has grown over the years, while new oak has been scaled back and spread across four coopers, so that no single barrel leaves its mark on the wine. The 2023 vintage comes in at 14.5% vol., dry.

On the palate

Dark cherry and red berries, with a floral note and fine spice. Fine-grained tannin, precisely judged acidity, a long and clearly defined finish.

Food pairing

With duck breast with cherries, venison saddle in juniper jus, coq au vin or guinea fowl with porcini. Also with Époisses, the region's cheese.

Special features

Gravity-flow cellar without pumps, new oak spread across four coopers, no synthetic treatments in the vineyard since 2007.
