About this wine

Character

A Champagne built on clarity rather than richness. Jean-Pierre Vazart keeps the dosage low, letting the chardonnay speak plainly: white blossom, ripe yellow fruit and the scent of wet chalk stone. In the three-litre format, the vintage matures more slowly and the fruit still feels youthful.

Terroir and origin

Chouilly is the northernmost Grand Cru of the Côte des Blancs, known for its particularly pure chalk soils. The estate's 11 hectares are spread across 30 parcels over the village's gentle hills, including the prized Montaigu vineyard. The vines average 44 years of age and root deep into the limestone.

Grape variety and vinification

Single-varietal chardonnay. The base wines ferment and age in stainless steel, with no wood contact, so the terroir speaks rather than the barrel. This is followed by around four years of lees ageing before disgorgement. The wine stands at 12.0% ABV and is bottled as Extra Brut with negligible dosage.

On the palate

A silky texture over taut acidity, with the vibrant minerality and saline freshness that the chalk of the Côte des Blancs is known for. The finish is long, chalky and dry, framed by the roundness that Chouilly lends to its chardonnays.

Food pairing recommendations

With oysters, seared scallops and scallop sashimi. Equally good with poached turbot in lemon butter and aged Comté.

Distinctive features

Jean-Pierre and Caroline Vazart lead the house in its third generation, based at the red-brick building erected by Louis-Victor Coquart in 1865. The 3000 ml double magnum is the format for long ageing and grand tables.
