About this wine

Character

A fragrant Blanc de Blancs with ripe fruit and the roundness Chouilly lends its Chardonnays. The nose shows lemon zest and white blossom, underscored by wet chalk and a subtle yeasty note.

Terroir and origin

Chouilly is the northernmost Grand Cru of the Côte des Blancs, where the chalk soils are especially pure. Jean-Pierre and Caroline Vazart lead the house in its third generation, farming eleven hectares across 30 parcels; the vines average 44 years old and root deep into the limestone. The estate's headquarters remains the red-brick house built by Louis-Victor Coquart in 1865.

Grape variety and winemaking

Pure Chardonnay. Ageing takes place in stainless steel, without oak, so the terroir speaks rather than the barrel. The wine rests around four years on the lees before disgorgement; the dosage stays low, hence Extra Brut. 12.0% ABV.

On the palate

Dry and taut, carried by saline freshness and a fine mousse, the texture silky, the finish chalky. The 3000 ml Double Magnum format allows the champagne to mature more slowly, lending it additional depth.

Food pairing suggestions

As an opener with oysters, sashimi or sole. Equally well with pan-seared turbot, white poultry in lemon jus and aged Comté. This format is made for the long table.

Distinctive features

Since 1982 the family maintained a Réserve Perpétuelle. In 2020 Jean-Pierre Vazart gave it up as he changed his approach in the vineyard: nearly 40 years of reserve wine sacrificed for a conviction.
