About this wine
Character
A Blanc de Blancs that holds juiciness and clarity together: ripe fruit on the nose, underpinned by a saline edge that runs through the entire wine. Crystalline and glass-clear, with a noticeable intensity despite all its finesse.
Terroir and origin
Chouilly, the northernmost Grand Cru of the Côte des Blancs, is a mosaic of micro-terroirs that combines minerality, power and fruit. Jean-Pierre and Caroline Vazart run the house in its third generation; its home is the red-brick building built by Louis-Victor Coquart in 1865. Eleven hectares are spread across 30 plots, with vines averaging 44 years of age and rooted deep in limestone.
Grape variety and vinification
100 percent Chardonnay, aged in stainless steel rather than oak: Jean-Pierre Vazart lets the terroir speak, not the vessel. Bottled in March 2019, around four years of ageing on the lees, disgorged in December 2024. The dosage sits at a very low 2.5 g/l, as befits an Extra Brut. 12.5% Vol.
On the palate
Bright, pale yellow with green highlights, very fine bead. Juicy and fragrant on the nose: quince, vineyard peach and orange, with a touch of anise and chamomile; with air, oyster shell and dry pastry emerge. The palate is juicy, with a saline edge and fine effervescence.
Food pairing suggestions
A Champagne made for the table: oysters, scallops, sole, sashimi, pan-fried haddock, fine poultry, plus smoked fish and aged hard cheese.
Special features
The saline-mineral impression is so pronounced it evokes the sea. Add to that the interplay of ripe fruit and cool tension that defines Chouilly Chardonnay: fragrant, round, never heavy.
