About this wine
Character
A mature, profound wine granted extraordinary density by eleven years in cask and on the lees. It feels earthy and deep, rests entirely within itself, and yet remains energetic without ever becoming overbearing.
Terroir and Origin
The vines are planted in the Wachau on loam, loess, and paragneiss. Nikolaihof manages its 22 hectares as a living organism: wild herbs between the vines, bees, and green lizards basking on the stone terraces. The estate stands on Roman foundations dating back to 63 BC and has been run by the Saahs family since 1894.
Grape Variety and Vinification
Single-varietal Grüner Veltliner, 12.5% ABV, dry with 1.2 g/l residual sugar and 4.7 g/l acidity. Aging took place over eleven years in large, old wooden casks; it was "late bottled" in April 2024, on a fruit day according to the lunar calendar.
On the Palate
Luminous lemon yellow with green reflections. The nose opens with lime, kaffir lime, and bergamot, tart mandarin peel, and a hint of sencha tea; as it warms in the glass, ripe pear and quince emerge. Beneath lies a shifting spectrum of pepper, coriander, curry, lemongrass, caraway, clove, and parsley. On the palate, moderate acidity and restrained creaminess, with a fine mouthfeel animated by autolysis and generous umami. The aromas of the nose return subtly, with mango and papaya lingering alongside herbs and spices on the long finish.
Food Pairings
Grilled curry chicken with mango-bell pepper-chili salad, millet salad with squid and coco beans, or roasted sweetbreads with porcini mushrooms and white tomato foam.
