About this wine

Character

A cool, compact Riesling full of finesse, with a radiant, deep golden yellow hue in the glass. The nose shows dried oyster shell and sea breeze, alongside lime, kumquat, green apple and star fruit.

Terroir and origin

The Hipping is located in Nierstein on the Roter Hang and was first documented around 1550 as "Hupbuhl"; in local dialect, Hippe means goat and Buhl means hill. The estate's two parcels meet at the highest point of the vineyard, their north-east and south-west facing slopes forming a small, natural amphitheatre. At 80 to 170 metres, with slopes of up to 60%, the site lies in the sun all day long. The sparse primary rock soils, around 280 million years old, store the day's warmth, while cool night winds from the side valley keep the acidity vibrant.

Grape variety and vinification

Riesling. Kühling-Gillot has worked biodynamically since 2005, regularly applying preparations 500 and 501. The grapes are hand-harvested and strictly selected, the must ferments spontaneously, and ageing takes place in a 1,200-litre oak cask. In the cellar, sulphur use is kept to a minimum and no fining agents are used.

On the palate

The wine is taut on the tongue, carried by vibrant acidity and an intense saline note that both provokes and invigorates. Beneath lies considerable depth. Be sure to decant and serve not too cold, in large glasses.

Food pairing suggestions

Ravioli with walnuts and orange sauce, carabinieri with truffle, Vin Jaune and celery purée, or crispy pork roast with grilled beets, mashed potatoes and glazed onions.

Distinctive features

Kühling-Gillot and Battenfeld-Spanier unite two VDP estates under one biodynamic philosophy. Hans Oliver Spanier aims to restore the Hipping, the final piece of the vineyard portfolio on the Roter Hang, to new prominence.
