About this wine
Character
A dry Grand Cru with a cool, taut texture and 12.5% Vol. Minerality leads, while the fruit takes a back seat. A Riesling that favours tension over opulence and still has years of ageing potential ahead of it.
Terroir and origin
The VDP.Grosse Lage Hipping lies on the Roter Hang between Nierstein and Nackenheim, where weathered Rotliegend soil drops steeply down to the Rhine. This iron-rich rock stores the day's warmth and gives Kühling-Gillot's Rieslings their signature smoky minerality.
Grape variety and vinification
100% Riesling. Carolin Spanier-Gillot and Hans Oliver Spanier have farmed their vineyards biodynamically since 2005, using preparations 500 and 501 and following a working rhythm aligned with the lunar phases. In the cellar, the must ferments spontaneously in large wooden casks and steel tanks, sulphur use is kept to a minimum, and no fining agents are used.
On the palate
The nose reveals smoky mineral notes, ripe peach and yellow citrus fruit, alongside a subtle herbal spice. The wine is uncompromisingly dry on the palate, with juicy acidity carrying a saline minerality far into the finish.
Food recommendations
Pan-fried pikeperch, scallops and delicate veal pair just as well as roasted pheasant breast. Mature Appenzeller cheese and moderately spiced Asian dishes also complement this Riesling's structure beautifully.
Special features
Kühling-Gillot and Battenfeld-Spanier are two VDP estates united under one biodynamic philosophy. The Grand Crus from Pettenthal, Hipping and Rothenberg rank among the finest expressions of German Riesling. Bottled in Bodenheim in Rheinhessen.
