About this wine
Character
The Fiole is an undosed Blanc de Blancs from a single parcel in Ville-sur-Arce, carried by chalky minerality. Ripe citrus fruit, fine creaminess and a cool tension that lingers long and taut.
Terroir and origin
The grapes grow in Ville-sur-Arce in the Côte des Bar, at 234 metres of altitude, on clay over Kimmeridgian limestone. The Jurassic soils of the Côte des Bar, Kimmeridgian marl and Portlandian limestone, rich in marine shells, give this Champagne its minerality and drive. Benoît Doussot founded Clandestin in 2015 as a micro-négociant and now works out of his own cellar in Landreville.
Grape variety and vinification
Pure Chardonnay, hand-harvested in 2023. The base wine fermented spontaneously and aged for 15 months in oak barrels; Doussot favours barrels of 500 to 600 litres, as they keep the wines leaner and require less sulphur. After bottle fermentation, disgorgement took place in September 2025, without dosage: Brut Nature, meaning no sugar addition whatsoever.
On the palate
The nose is intense and layered: Amalfi lemon, lemon curd, apricot and pear, underscored by brioche and toasted grain, fine spice notes of anise, caraway and fennel seed, plus a subtle smokiness. On the palate the wine stays clear and precise, the cool chalk imprint lends freshness, and the finish is saline-iodine and remarkably long. The ripe 2023 vintage underlays it with a subtle sweetness of extract.
Particularities
Les Passagers is the name of the line for vineyards that are not under permanent contract and may change from year to year. The quantity is extremely small, and this vintage may be a one-off. Clandestin buys exclusively organically grown grapes from eleven partner growers, supports them through conversion, and pays fair prices.
