About this wine

Character

Brut Nature here means zero dosage: no sugar to soften the acidity. The 2019 accordingly stands bare, taut and saline, carried by the length that comes from lees ageing. The magnum format ages more slowly and evenly than the standard bottle.

Terroir and origin

Côte des Bar, the south of Champagne. The plots from which Benoît Doussot sources his grapes lie on Kimmeridgian marl and Portlandian limestone, both of Jurassic origin and rich in fossilised marine shells. Les Passagers, "the passers-through", is his line of ephemeral single-vineyard wines, produced for only a handful of vintages. Haut de Val Barmont is one of them.

Grape variety and vinification

Chardonnay, single-varietal, a Blanc de Blancs at 12.0% vol. Spontaneous fermentation begins under temperature control, the base wines age for twelve months in 500- to 600-litre barrels, deliberately chosen large by Doussot: they keep the wines leaner and require less sulphur. A winter "en masse" in tank follows, and after the bottle fermentation, at least 15 months sur lattes.

On the palate

Lemon and green apple, along with white blossom and a touch of brioche from the lees. Bone dry, with vibrant acidity and a saline-mineral finish.

Food pairings

Oysters and a seafood platter, grilled turbot with lemon butter, aged Comté or Parmesan.

Notable features

Clandestin started out in 2015 as a micro-négoce; the first cuvées were made in Bertrand Gautherot's converted barn. Doussot buys only organic grapes, supports his eleven partner growers through their conversion, and pays them fair prices. Since 2023, he has worked in his own cellar in Landreville, built over two levels for gravity-flow vinification without pumps.
