About this wine
Character
A premier cru from Morey-Saint-Denis, built on clarity rather than power. The Lignier family has grown Pinot Noir here since the 1880s, and today Laurent Lignier leads the domaine in its fifth generation. «Les Chaffots» distils the estate's style in miniature: cool fruit, fine-grained tannin and a long, clear finish.
Terroir and origin
The climat «Les Chaffots» lies in the upper, northern part of the commune, on limestone soil rich in clay and of medium depth. The slope drains well, and the limestone gives the wine structure and mineral depth. The 2023 vintage in Burgundy was warm and dry.
Grape variety and vinification
Pure Pinot Noir. Long, cool macerations precede fermentation, with the proportion of whole clusters having grown over the years. The cellar, fitted out in 2008, works by gravity alone. Laurent Lignier has deliberately scaled back the share of new oak and spread it across four coopers so that no single barrel dominates the wine. 13.0% vol.
On the palate
Silky texture, vibrant acidity, fine-grained and well-integrated tannin. Over the dark cherry unfold raspberry and blackberry, followed by violet and damp earth. The finish stays long and clear, carrying notes of forest berries and undergrowth.
Food pairings
Classic with coq au vin and bœuf bourguignon, as well as with roast duck breast with cherry sauce, feathered game or rack of lamb with herb crust. To finish, an aged Époisses, or more simply, grilled mushrooms with thyme.
Special features
Since 2007 the estate has worked without synthetic products in the vineyard. The vines trace back to twenty-seven rows planted by Henri Lignier in 1955 in the Monts Luisants climat, whose wood he used in the 1960s to propagate the other parcels, vine by vine.
