About this wine
Character
A Pinot Noir of cool precision: dense dark fruit, fine-grained tannin, a long and clear finish. Nothing about this wine rushes — its power sits in the mid-palate and in the length. In this large format it matures more slowly, gaining finesse over the years.
Terroir and origin
The grapes come from Premier Cru sites in Morey-Saint-Denis in the Côte de Nuits. The Lignier family has tended Pinot Noir here since the 1880s: Jacques Lignier bought parcels back then that phylloxera had ruined, his son Jules patiently replanted them, and Hubert Lignier took over direction in 1959. Today Laurent Lignier runs the domaine in the fifth generation. The estate's old vines are prone to millerandage, bearing tiny, often seedless berries of enormous concentration.
Grape variety and vinification
Pinot Noir, vinified dry, 14.0% ABV. Since 2007 the estate has worked without synthetic agents in the vineyards. The cellar, acquired in Morey-Saint-Denis in 2008, moves the wine by gravity alone — from the must to the bottling, no pump is used. Long, cool maceration periods precede fermentation; the proportion of whole clusters has grown over the years, and new oak is deliberately kept low and spread across four coopers, so that no single barrel imprints itself on the wine.
On the palate
Black cherry and blackberry, along with violet, fine spice and an earthy, mineral trace. The tannin stays fine-grained, the acidity taut, the finish cool and clear.
Food pairings
Roast pigeon or duck breast with dark jus, saddle of venison with juniper and porcini mushrooms. Equally well with braised leg of lamb with herbs, coq au vin or a ripe Époisses.
Special features
Double magnum of 3000 ml, bottled at Domaine Hubert Lignier in Morey-Saint-Denis. The cuvée comes from old vines whose tiny berries give this wine its density.
