About this wine
Character
A Pinot Noir of cool precision, in the style the Domaine Hubert Lignier draws across its sites: finely delineated, elegantly built, vinified for clarity and length. The three litres of the double magnum slow the ageing and give the wine time.
Terroir and origin
Morey-Saint-Denis in the Côte de Nuits, where the Lignier family has farmed Pinot Noir since the 1880s. Jacques Lignier bought plots back then that phylloxera had devalued; his son Jules replanted them. Today Laurent Lignier runs the estate in its fifth generation, reunited under a single name since 2013.
Grape variety and vinification
Pinot Noir from old vines. Long, cool maceration periods precede fermentation, and the proportion of whole clusters has grown over the years. The cellar in Morey-Saint-Denis, acquired in 2008, works by gravity alone — from the must to the bottling, no pump moves the wine. Laurent Lignier deliberately holds back on new oak and spreads the barrels across four coopers, so that none leaves its mark on the wine. 13.0% vol., vinified dry.
On the palate
A silky flow over fine-grained tannin, carried by lively acidity. Cherry and raspberry lead, followed by violet, forest floor and fine spices; the finish stays long, with a mineral base.
Food pairings
With duck breast in cherry sauce, squab or pink-roasted veal fillet. Equally with coq au vin and bœuf bourguignon, with venison and deer, and finally with aged Époisses or Brie de Meaux.
Special features
No synthetic products have been used in the vineyards since 2007. The double magnum format makes this a bottle for the cellar and for the grand table.
