About this wine
Character
A bone-dry Riesling that tells its origin through structure: vibrant acidity, saline-tinged minerality, juicy fruit. Its moderate alcohol of 11.0 % vol. keeps it light without sacrificing depth.
Terroir and origin
Ökonomierat Rebholz is located in Siebeldingen at the edge of the Palatinate Forest and farms 26 hectares across a mosaic of four geological formations: Rotliegend, variegated sandstone, shale and shell limestone. This wine comes from the shell limestone, which lends the Riesling a fine acid structure that translates into density in the glass. Hansjörg and Birgit Rebholz run the estate biodynamically, carrying on a legacy spanning four generations.
Grape variety and vinification
Pure varietal Riesling. The must rests on its skins for 24 hours, then clarifies through natural sedimentation before ageing in stainless steel tank. No wood, nothing added: fully fermented and dry, in keeping with the house's principle.
On the palate
The nose opens with apple, citrus and mandarin, joined after a few days in an open glass by pineapple, apricot and white blossom. On the palate the same mineral depth continues, with the acidity embedded in saline minerality and fruit. The finish is long and cool.
Food pairing suggestions
Fresh goat cheese on carpaccio of candy-striped beetroot with pomegranate, sautéed prawns with wild herb salad and pumpkin in wild raspberry vinegar or pike-perch and salmon roulade with Riesling butter, sugar snap peas and carrots.
Special features
While young, the wine benefits from decanting; even after several days in an open bottle it remains fresh and youthful. Its ageing potential is very good.
