About this wine
Character
François de Nicolay describes the house style as neo-classical: little oak, precise fruit, decades of ageing potential. This bottling pushes that principle further still, as without added sulphites, fruit, acidity and structure stand entirely on their own.
Terroir and origin
The premier cru site Île des Vergelesses lies in Pernand-Vergelesses at the foot of the Corton hill, on limestone soil that lends Pinot Noir finesse and structure. Chandon de Briailles farms 13.7 hectares across twelve sites in three communes: Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton. Ageing takes place in a vaulted 12th-century cellar, dug by monks of the Abbey of Cîteaux.
Grape variety and vinification
100 percent Pinot Noir from biodynamic farming, practised by the estate since 2005. Whole-cluster fermentation has been standard since 2011, its proportion determined by the vintage. Claude de Nicolay, cellar master since 1988, works without fining or filtration, and for this cuvée without added sulphites since 2017. The house's red wines age for 14 to 20 months in barrel, with a maximum of 15 to 20 percent new oak. 12.5% ABV, dry.
On the palate
Slender and silky, carried by vibrant acidity. Red cherry and wild strawberry remain clearly defined, joined by violet, a whisper of black pepper and a herbal spiciness. The tannins are fine-grained, the finish long and saline.
Food pairing
Roast duck breast with cherries, herb-crusted rack of lamb and chanterelles in cream, as well as grilled vegetables. For cheese, a ripe Epoisses or an aged Comté.
Special features
Four horses, Diva, Epi, Farandole and Gipsy, plough the vine rows; Chandon de Briailles is the only estate in Burgundy to work all of its nearly 14 hectares with horses alone. One worker per hectare. Against mildew, the estate trialled skimmed milk in place of copper sulphate, now approved in certified organic viticulture. Demeter certification since 2011.
