About this wine

Character

A Chardonnay of great composure: citrus, stone fruit, saline impressions and a touch of verbena come together rather than standing out individually. Clarity and balance define the profile.

Terroir and origin

The roughly two-hectare "Les Quarts" plot lies in Pouilly-Vinzelles, on a southeast-facing slope at around 230 metres of altitude. The living clay-limestone soil of the Bajocian contains silicate crystals. Here stand some of the estate's oldest vines, around 48 to 80 years old. La Soufrandière dates back to 1947, when Jules Bret acquired one hectare in the Clos de Grand-Père; since 2000 his grandsons Jean-Philippe and Jean-Guillaume Bret have run the estate, joined by Marc-Antoine since 2010.

Grape variety and vinification

Pure Chardonnay, farmed biodynamically, with traditional manual work in the vineyard. Selective hand harvest, whole-bunch pressing, spontaneous fermentation, followed by 17 months of ageing on lees, partly in stainless steel tank, partly in used barriques.

On the palate

Creamy texture, carried by finely powdery phenolics and a ripe, vibrant acidity. Juicy and rich in extract without ever feeling heavy, with a slightly bitter finish and a long, cool aftertaste.

Food pairing

With turbot in beurre blanc, seared scallops on cauliflower purée or white poultry in morel cream sauce. Also pairs well with young Comté and lemon and thyme risotto.

Special features

The ZEN philosophy forgoes any sulphur addition entirely during fermentation and ageing; only a minimal amount is added at the unfiltered bottling stage. Millerandée refers to small-berried bunches. The estate has been organically certified by Ecocert since 2003 and has carried the Demeter seal since 2006, whose logo appears on the label.
