About this wine

Character

A citrus-driven, dry-styled Chardonnay from the Les Quarts vineyard in the Pouilly-Vinzelles appellation in southern Burgundy. Pale golden yellow in the glass, with a nose of tart citrus notes, verbena and mint, underscored by a subtle waxy note and a touch of ripe stone fruit. The wine feels composed and clearly defined.

Terroir and origin

Les Quarts is one of the finest terroirs in the Pouilly-Vinzelles appellation. The vineyard faces southeast, and the soil consists of siliceous and, above all, iron-rich clay and limestone from the Jura's Bajocian era. The Chardonnay vines are between 48 and 80 years old, and the plot has been ploughed by horse since 2008.

Grape variety and vinification

Pure Chardonnay, hand-harvested on 26 and 27 August 2022. Whole-cluster pressing and spontaneous fermentation follow, then 17 months of ageing: eleven months first in barrels and foudres, then in foudres, with malolactic fermentation running to completion. The pH is 3.18, total sulphur 34 mg/l.

On the palate

Juicy, mouth-coating fruit dominated by citrus, along with yellow pome fruit and stone fruit. The acidity builds tension and gives the wine drive. The finish turns saline and austere, with pure citrus fruit and a light tannic edge.

Food pairing suggestions

Oven-roasted chicken drumsticks with orange slices, fennel and anise, grilled bread with sardines, sweet onions and yellow tomatoes, or eggs stuffed with miso mayonnaise and Aleppo chili flakes.
