About this wine

Character

A cool-climate Sauvignon Blanc: floral-scented, aromatic, with fine herbal spice and a polished, taut structure. Dry, 12.5% ABV.

Terroir and Origin

The Kapellenweingarten is Sattlerhof's highest-altitude single vineyard, situated at 600 metres. The vines take root on slopes ranging from 20 to 70% incline in a blend of calcareous quartz and silica gravel. The cool, breezy microclimate slows ripening, resulting in a late harvest. Willi and Andrea Sattler farm their vineyards on the steep slopes surrounding Gamlitz.

Grape Variety and Vinification

Single-varietal Sauvignon Blanc from roughly 35-year-old vines, hand-selected. Fermentation occurred spontaneously in large, neutral wooden casks, where the wine matured for two years. 1.1 g/l residual sugar is balanced by 6.8 g/l acidity.

On the Palate

Light straw yellow in the glass. The nose reveals white and yellow blossoms, a hint of nutmeg, meadow herbs, white currants, white peach, and yellow pear, joined by a dark minerality. On the palate, the wine is lean and piquant, showcasing juicy, white-fleshed fruit with subtle citrus and discreet green fruit nuances. Herbal and stony spice carries through to a slightly salty, darkly mineral finish.

Food Pairings

Pairs beautifully with trout poached in court-bouillon, herb risotto, asparagus salad with vinaigrette, or poultry with lemon-thyme jus.

Special Features

Südsteiermark DAC from certified organic viticulture (AT-BIO-402). Two years of maturation in large wooden casks is unusually long for a Sauvignon Blanc, imparting composure and depth rather than loud, primary fruit.
