About this wine
Character
A Rosso that puts fruit front and centre without losing its contour: black cherry and blackberry are dense and clearly drawn, joined by a hint of cassis, mild juniper spice and delicate toasty notes. Youthful tannin keeps the fruit in shape.
Terroir and origin
The grapes grow in the Pian dell'Orino vineyard and the middle section of Pian Bassolino, at 320 to 500 metres above sea level. The soils change over small distances: calcareous clay, weathered marl, blue-grey Pliocene limestone and flysch. Caroline Pobitzer and Jan Erbach have farmed their six hectares biodynamically since 1997 and have mapped the geology of the parcels themselves.
Grape variety and vinification
Pure Sangiovese from vines with an average age of 20 years. Hand-harvested with multiple sorting passes, in the vineyard, on intake and at the sorting table. Spontaneous fermentation began immediately, reached 31 degrees and finished after 15 days, followed by a further 12 days of maceration on the skins. This was followed by 25 months in 25-hectolitre oak casks. 13.5% vol., dry.
On the palate
The entry is juicy, extract-rich and almost meaty, with ripe fruit and lively freshness in balance. Velvety tannins give contour to the exuberant fruit at the edges of the tongue. The finish stays austere, animating and ethereally fruity.
Food pairings
Pasta alla Norma, fish soup with pan-fried grey mullet or braised hare ragù with broad tagliatelle.
Special features
Yields are radically reduced, following the rule: one vine, one bottle. Pruning follows the lunar calendar, sprays of nettle and chamomile tea replace chemical treatments, and no oenological intervention is used in the cellar. The estate publishes the analytical data of its harvests.
