About this wine
Character
Pierre-Henri Rougeot crafts a linear, cool Chardonnay that draws its tension from acidity and limestone rather than power. The style is purist, with no cosmetic intervention in the cellar. Clean fruit, taut acid line, fine minerality, and at 12.5% vol. the wine stays lean.
Terroir and origin
Saint-Romain lies in one of the highest valleys of the Côte de Beaune in Burgundy's French heartland. The cool microclimate and steep slopes of the Le Jarron vineyard, on chalky marl, allow the grapes to ripen late. A terroir long considered too cool, which today yields fresh, finely structured wines.
Grape variety and vinification
Single-varietal Chardonnay. In the vineyard, Rougeot farms organically; in the cellar, with minimal intervention: spontaneous fermentation with wild yeasts, followed by ageing in used oak barrels. New oak is avoided entirely, so the grape variety and origin retain the final word. The wine is vinified dry.
On the palate
Green apple and white blossom on the nose, alongside a chalky streak. The palate is crisp and focused, the acid structure taut, the citrus note subtle. The finish stays saline and narrow, without breadth.
Food pairings
This saline freshness pairs with pan-fried pike-perch on lentil vegetables, with scallops and seafood alike, as well as with delicate poultry such as Poulet de Bresse in cream sauce. Young Comté and Mondseer also make fine companions.
Special features
Saint-Romain AOC, 2023 vintage, 12.5% vol. in a 750ml bottle. A Chardonnay from cool, high-altitude sites with a limestone structure, made without technical polish.
