About this wine
Character
A dry Chardonnay that draws its tension from acidity and salinity rather than richness: crystal clear, precise, balanced, deliberately lean at 12.0% vol. On the nose, lime, green apple and greengage sit alongside kitchen herbs, with a chalky undertone.
Terroir and origin
The parcel in the Climat La Bonnode covers two hectares, sits at 250 metres below the Roche de Vergisson, and faces east. The soil is clay over limestone.
Grape variety and vinification
Chardonnay from 35-year-old vines, hand-harvested on 22 and 23 September 2021. After whole-cluster pressing, the must fermented spontaneously. Ageing lasted 17 months, first in a concrete egg, then in neutral tanks following the blending. Only a light dose of sulphur was added before bottling; total sulphur stands at 29 mg/l, with a pH of 3.21.
On the palate
Medium straw yellow in the glass. The wine shows plenty of citrus fruit and a touch of stone fruit, along with the cool, finely grained texture from the concrete egg, reminiscent of a Japanese whetstone. Towards the finish, the acidity builds pressure, meeting a mouthwatering salinity.
Food pairings
Roast chicken with lemon and verbena, asparagus with sauce gribiche and steamed char, or a Breton seafood platter.
Special features
Jean-Philippe and Jean-Guillaume Bret began converting the estate in 2000: Ecocert-certified organic since 2003, Demeter-certified for biodynamic viticulture since 2006, using preparations of cow manure and quartz, with some plots worked with horses. The 2021 Ovoide Zen is one of three bottlings from the La Bonnode site this vintage.
