About this wine
Character
A Premier Cru of clear definition. The fruit stands unadorned, as Claude de Nicolay bottles this cuvée without fining, without filtration and without added sulphur. François de Nicolay calls the house style neo-classical: restrained oak, precise fruit, with decades of ageing potential.
Terroir and origin
Les Lavières lies in Savigny-lès-Beaune on the Côte de Beaune. The vineyard's name derives from the Burgundian word for stone slabs, pointing to the stony, limestone-rich soil. Chandon de Briailles farms 13.7 hectares across twelve plots in the communes of Savigny-lès-Beaune, Pernand-Vergelesses and Aloxe-Corton, biodynamic since 2005 and Demeter-certified since 2011. The entire vineyard area is worked with horses.
Grape variety and vinification
Pinot Noir, fermented as whole clusters; this has been standard practice at the estate since 2011, with the proportion varying by vintage. Ageing lasts 14 to 20 months in barrel, with a maximum of 15 to 20 percent new oak. Since 2017, Claude de Nicolay has bottled selected cuvées without added sulphur. Sans Sulfites Ajouté means exactly that: no added sulphur.
On the palate
Silky tannins and fresh acidity carry cherry and raspberry, along with floral hints and an earthy note of damp forest floor. Dry, with mineral depth and length on the finish.
Food pairings
Roast duck breast with cherries, coq au vin or beef fillet with mushrooms. Also partridge, rack of lamb and aged Époisses, or, for a vegetarian option, mushroom risotto or roasted vegetables with thyme. Serve at 16 to 18 degrees.
Special features
Four horses, Diva, Epi, Farandole and Gipsy, plough the vine rows. The cellar dates back to the 12th century and was built by monks from the Abbey of Cîteaux. The de Nicolay family has run the estate since 1834; Nadine de Nicolay banished all synthetic products from the vineyards in 1989. One worker per hectare.
