About this wine

Character

A red wine built on transparency: light to medium-bodied, silky, with soft tannins and a freshness that effortlessly carries its moderate alcohol content of 12.5 percent. A slender elegance, just as the Callet grape produces it on Mallorca.

Terroir and origin

The grapes grow in Son Porquer near Porreres, Mallorca's oldest biodynamically farmed vineyard. A historic mill stands among the vine rows, the estate's landmark. Bàrbara Mesquida Mora has planted more than a hundred fruit trees there to promote biodiversity.

Grape variety and vinification

Single-varietal Callet from 56 to 61-year-old bush vines. This native variety withstands Mediterranean heat and drought while still yielding slender, fresh red wines with moderate alcohol. In the cellar, the wine ferments spontaneously with wild yeasts, remains unfined and receives little sulphur. It is aged in 500-litre French oak barrels.

On the palate

The nose is expressive and fine: intense floral notes over sweet cherry fruit, of great purity. On the palate, then, cherry, a touch of pepper and green pepper. At first the wine feels smooth; with air contact it gains grip, complexity and length.

Food pairings

With lamb chops and rosemary potatoes, whose herbal spice picks up the wine's peppery side, and with spicy pecorino, against which the fine tannins rub.

Distinctive features

Sòtil means "roof" in Catalan — exactly what Bàrbara Mesquida Mora lacked when she started her own project in 2012. The estate has been Demeter-certified since 2007, one of Spain's first biodynamic wineries, with all work following the lunar calendar.
