About this wine

Character

Bright golden yellow, extremely fine bubbles. This Blanc de Blancs needs time in the glass, revealing itself layer by layer: first delicate pastry, butterscotch and plenty of almonds, then cool, fresh quince and Williams pear. Depth comes from sea spray, fresh oyster shell and samphire, while the chalky underlay remains perceptible and defining throughout. Parsley, lemon thyme and chervil add contrasting herbal accents.

Terroir and origin

Chouilly is the northernmost Grand Cru of the Côte des Blancs, a village of pure chalk soils. Jean-Pierre and Caroline Vazart farm eleven hectares across 30 parcels, including sites on the Montaigu; the vines average 44 years of age and root deep into the limestone. The estate's home remains the red-brick house built in 1865 by Louis-Victor Coquart. The family now runs the house in its third generation.

Grape variety and vinification

Pure Chardonnay. The house favours stainless steel over wood, so that the terroir speaks rather than the barrel, and the dosage stays low. Tirage in May 2017, disgorged in August 2024: over seven years on the lees. A dosage of 1 g/l makes this an Extra Brut in the strictest sense. 12.5% ABV.

On the palate

The bubbles foam fine and well-dosed, the mouthfeel dense and firm. Citrus notes drive the aromatics: mandarin, a touch of lime, above all Meyer lemon. Behind them, almond and yeasty nuances. Balance and length are very good, and the finish shows no sign of stopping.

Food pairing suggestions

Oysters and shellfish, scallops with lemon butter, delicately smoked salmon or langoustines.

Special features

Since 1996 the house has belonged to the Spécial Club association, whose members taste each other's wines and reserve the seal for only the finest vintages. The 2016 is one of them.
