About this wine

Character

A Pinot Gris built on finesse. Pale white gold in the glass, with a fine, elegant nose: apple and pear, citrus and lemon verbena, pale blossom, a hint of anise, plus ginger and artichoke. Over this lies a saline, iodine-like character with a maritime touch.

Terroir and origin

The fruit comes from parcels in Reuilly. The vines grow mainly on clay-limestone soils, partly also on soils containing pebbles and red sand.

Grape variety and vinification

Single-varietal Pinot Gris by Guillaume Sorbe, spontaneously fermented. Ageing lasted three years, partly in tank, but mainly in used 400- and 600-litre barrels. Since the 2018 vintage, the Toison d'Or has been declared as Vin de France. The wine is dry, at 13.0 % vol.

On the palate

Delicate and remarkably finely structured. Acidity and tannin are cushioned by fruit and a fine juiciness, allowing the wine to retain tension without gaining in weight. An unusual and highly successful interpretation of this grape variety, which pairs especially well with aromatic cuisine.

Food pairings

Creamy salsify soup with pumpernickel crunch from vegetarian cuisine, grilled red mullet with fennel-orange vegetables, or sautéed veal sweetbreads with poached oysters in saffron sauce.

Special features

Three years of ageing before bottling shape this white wine more than any emphasis on fruit. Decant and drink from large glasses: with exposure to oxygen, the Toison d'Or gains further depth.
