About this wine

Character

A Blanc de Blancs that brings together cool chalkiness and generosity. The stony vein carries fresh lemon, lemon meringue, almond and nut, along with shortcrust pastry, red apple with its skin and white blossom.

Terroir and origin

Chouilly is the northernmost Grand Cru of the Côte des Blancs. Here lies the house's eleven-hectare Grand Cru vineyard, where the Chardonnay vines, averaging 45 years of age, root deep into belemnite chalk.

Grape variety and vinification

Pure Chardonnay. 56 percent of the cuvée comes from the 2018 harvest, 44 percent from a réserve perpétuelle begun in 1982, from which 40 percent is drawn each year and then replenished. The base wine fermented in temperature-controlled stainless steel tanks and underwent malolactic fermentation. It was disgorged in June 2022, with a dosage of 1.5 grams.

On the palate

Fresh and ripe at once, with white-fleshed pome and stone fruit, citrus fruit and a hint of Cointreau. The texture remains elegant, given grip by fine phenolics, beneath which lies the chalky mineral character of these soils. The acidity builds considerable tension, and the perlage stays fine and lively. The autolytic notes from the reserve wine form a noble foundation, allowing the saline, iodine-tinged and citrusy character to take center stage.

Food pairing suggestions

This Champagne pairs well with fish & chips, with prawns in herb broth with Szechuan pepper, and with tandoor octopus with quinoa-corn salad and chutney.

Special features

Jean-Pierre and Caroline Vazart lead the house in its third generation and work consistently with stainless steel rather than wood, keeping the dosage low. At the time of this cuvée, the conversion to organic viticulture was underway, with the first certified organic harvest following in 2020.
