About this wine

Character

A Premier Cru that draws its stature from the age of its vines: densely woven, silky, finely drawn. Cherry and violet lead, with a spicy note of undergrowth underneath. The magnum format slows development, so this wine has time on its side.

Terroir and origin

Les Santenots sits on a dividing line: the soil belongs to Meursault, but the appellation is classified under Volnay. The parcel is part of the eleven hectares Darviot-Perrin farms in the Côte de Beaune, including seven Premier Cru sites. The estate is based in Monthélie and has held its parcels there since the 19th century.

Grape variety and vinification

Pure Pinot Noir from vines planted in 1927 that yield concentrated grapes. Pierre-Antonin Darviot, at the helm since 2019, ferments with up to 100% whole clusters; the stems contribute floral notes and silky tannins. The wine is neither fined nor filtered, and sulfur is used only in small amounts. 12.5% vol., dry.

On the palate

Fine, silky tannins, precise red fruit, a dry finish carried by acidity. The structure already holds up when young, yet leaves the wine room to develop for another five to ten years.

Food pairings

Saddle of venison with juniper jus and duck breast with cherry sauce, as well as cured salmon trout, mushroom risotto or Comté at medium maturity. Serve at 16 to 17 degrees, decanting an hour in advance.

Distinctive features

Pierre-Antonin Darviot took over the estate in 2019 at age 25, following the death of his father Jacques, and converted it to biodynamic farming. Ten generations of the family preceded him. He studied oenology in Beaune and gained experience in the Loire and New Zealand. Volume 1500 ml.
