About this wine
Character
A powerful, invigorating red wine that thrives at a moderate 12.5% ABV: density and spice without any heaviness. The colour is a deep, opaque garnet red, turning black at the core.
Terroir and Origin
Pamhagen in Burgenland, located at the lowest point of Austria amidst the flat steppe landscape near Lake Neusiedl. Here, the Michlits family manages a Demeter-certified farm where over 300 Angus cattle graze; their manure fertilises the thirty hectares of vineyards, while estate-grown grain feeds the livestock. Cow horns filled with fermented manure overwinter in the soil, and biodynamic herbal preparations based on Rudolf Steiner's teachings revitalise the earth.
Grape Variety and Vinification
100% Cabernet Franc. Spontaneously fermented, with 45 days of skin contact using whole bunches. Werner Michlits works entirely by gravity in the cellar, eschewing pumps; fermentation takes place in egg-shaped concrete vessels whose shape naturally promotes circulation during fermentation.
On the Palate
The nose brings together blackberry, mulberry, and blackcurrant with liquorice, tar, coffee, and black pepper, complemented by wild mint, rosemary, and thyme, dark floral notes, and dried rose petals. The palate fully delivers on this promise: juicy and intense, with subtle fruit sweetness, stimulating acidity, and spicy tannins. A distinct minerality glides across the tongue.
Food Pairings
Hare in a coffee crust with berry sauce and celeriac purée. Equally superb with pork belly in a bourbon marinade served with roasted potatoes and grilled corn, or as a vegetarian option, chestnut soup with rosemary satay and pickled black walnuts.
Special Features
The label features the Demeter logo and a cow illustrated by Nikolaus Eberstaller—the symbol of the holistic agricultural cycle from which this wine emerges.
