The Mâconnais in southern Burgundy is the home of Chardonnay on limestone and clay soils. Across gentle hills, the appellations unfold from Mâcon-Igé and Mâcon-Verzé to Pouilly-Vinzelles, Pouilly-Fuissé and Saint-Véran. Hand-harvesting and spontaneous fermentation are part of the work at the biodynamic Domaine La Soufrandière in Vinzelles, whose heart is the Les Quarts vineyard. Vines forty years old and more yield wines of ripe fruit and saline freshness.
