About this wine
Character
A Sauvignon Blanc of cool, restrained character. The nose brings together maritime notes of fresh seaweed, oyster shell and sea spray with intensely fragrant herbs: mint, chervil, coriander. Behind them, a subtle bready note, freshly crushed almonds, white pepper and toasted coriander seed, along with flint and limestone. The fruit of grapefruit, white peach and nashi pear, with delicate touches of passion fruit and lychee, remains secondary to the minerality.
Terroir and origin
The vines grow on limestone, on the Calcaire à Astéries, studded with fossilised starfish, and the porous Calcaire de Tonnerre. A total of 1.68 hectares is spread across several plots in Saint-Andelain, facing west and southwest, at 190 metres above sea level. The average vine age is 35 to 40 years, with a yield of 55 hl/ha. Antoine Gouffier took over the estate in 2018; it has been organic-certified since 2009.
Grape variety and vinification
Sauvignon Blanc, harvested in early September and fermented with natural yeasts: 60 percent in steel tank, 30 percent in 350- to 400-litre barrels, 10 percent in concrete eggs. Bottled without filtration, on a fruit or flower day during a waning moon.
On the palate
The first sip puts origin front and centre, letting fruit and stone flow into one another. The fruit runs subtle and delicate beneath the minerality, while retronasally, cold smoke and a fine peppery spice dominate. The stony side lends coolness and seriousness, and the finish stays long and herbaceously fresh.
Food pairings
With cold sliced roast beef with sauce gribiche and fried kale, with Vietnamese-style oysters with fish sauce, coriander and chilli, and with burrata with salsa verde.
Special features
Lunar phases and the division into leaf, root, fruit and flower days guide the work in the cellar. Since 2020, all of the estate's wines have carried Demeter certification, with the logo shown on the label.
