Chablis is a subregion of Burgundy, where Chardonnay grown on the limestone soils of the Kimmeridgian yields wines with a saline edge and pure fruit clarity. Along the Serein, the vineyards rise in tiers through Premiers Crus to the Grands Crus Les Clos and Vaudésir. Château de Béru farms biodynamically under Athénaïs de Béru, while at Domaine de l'Enclos, Romain and Damien Bouchard champion spontaneous fermentation and ageing in used oak.
