About this wine
Character
A purist Sauvignon Blanc: coolly drawn, without showy aromatics and without excessive fruit. This wine works with tension and precision rather than volume, while remaining perfectly coherent throughout.
Terroir and origin
The grapes come from several parcels in Pouilly-Fumé along the Loire, owned by Guillaume Sorbe himself.
Grape variety and vinification
Single-varietal Sauvignon Blanc. Ageing lasts a little over a year, mainly in tank with a small portion in a used 600-litre barrel, so the oak remains in the background. Together with Le S des Poëte, it is always the youngest wine of the estate. 13.0% ABV, dry.
On the palate
Vital and pulsating, carried by great freshness and precision. On the nose, first pepper, nettle, wild herbs, green asparagus and vervain; after decanting, lime, lime zest, young mango and green gooseberry emerge.

A companion for dishes with green and spicy components.
Special features
Decanting this vintage is not a suggestion but a requirement: only with air does the fruit take its place alongside the herbal spice. In the glass, pale white gold with silvery reflections.
